Healthy Snacks: Peanut Butter balls

Healthy snacks do you find them? The answer is yes, but you need to read the labels carefully and often it is easier just to make them yourself. Melissa and Kelsey just love peanut butter and so we decided to try these peanut butter balls. We placed some of them in the deep freeze and they turned into "toffee", quite delicious.

Corn Nachos and Basil Pesto

A Bratz lunchbox filled with corn nachos and some basil pesto to dip them in. Basil Pesto must be my favorite sauce and I use it drizzled over pasta, smothered on bake potatoes as well as spread onto corn thins and rice cakes. Managed to find the last few hanepoot grapes and also included some strawberries and a few slices of pineapple. Found the Bratz lunchboxes at hypermarket only R12.00 each. Gavin has now banned me from purchasing any more lunchboxes as I can't resist practical lunchbox designs and I have accumulated quite a few excellent buys.

Healthy Snacks: Halva Bar and Spicy Popcorn

Healthy Snacks: Found some cubed mango yesterday and couldn't resist it. Even though the summer fruits are never quite as tasty out of season we had an early taste of summer. Raspberries are also always a huge hit in my home, it is a real pity about the prices though as this is definately a fruit I could stock up with. I also included some naartjie wedges and a few slices of sweet pineapple. I could also include a bag of popcorn everyday and it always comes home eaten. Kids love popcorn! This popcorn was made in my hot air popcorn popper, drizzled with cold pressed olive oil and then generously sprinkled with some of Mary-Ann's seasoning salt - delicious. The halva bar is made only from fresh ingredients sesame seeds, dates and raisins. It is one of my favourite Mary-Ann bars and I often tuck in as a treat. It is an excellent natural and sugar free alternative to energy bars but unfortunately my girls are not too fond of the taste, it is quite rich but decadent. I'm sure it will become an acquired taste in the not to distant future.

Lunch Box Ideas: Triple Decker Corn Thins

Today I packed in triple decker corn thins spread thickly with peanut butter one of those quick, easy and simple lunch box ideas you can reach for on the fly. (Although peanut butter is not ideal opt for the sugar free variety or the natural pressed. You can also try home made cashew butter which is equally delicious.) For a bit of variety I pulled out the cookie cutter and sent some heart shaped cucumber slices to school to remind the girls how much I love them. Some grapes, guava slices and a juicy ripe pear to finish it off. This lunchbox is a winner!

Healthy Snacks: Coconut Ice

Healthy Snacks: Today Melissa and Kelsey had 2 slices of healthy coconut ice, which is free of sugar, condensed milk and colourants. They also had chunks of greenpepper, some strawberries, pineapple slices, an apple and a naartjie.I also included a berry juice bottle made from ceres juice and filtered water diluted 50:50.
