Lunch Box:Wholewheat Blueberry Muffin

My promise... a surprise for an empty lunch box worked like a charm yesterday. Both Melissa and Kelsey's lunchboxes came home empty. This will not be an everyday occurence though but will be used as an incentive on days that I try different and most unusual combinations. Today the girls have a wholewheat blueberry muffin made with a combination of wholewheat and all purpose gluten free cake flour. They also have some lentil and rice balls (these are the meatball replica's in the photo) a baby banana, some pineapple rings and a sliced red plum. I'm awaiting the verdict on the lentil and rice balls as these are an excellent source of complex protein. Will they like them?

Lunch Box Ideas: Pasta Prima Vera and green figs

Lunch Box Ideas: A bowl full of pasta Prima Vera (made with grated carrots, broccoli florets, red pepper and chopped tomato with delicious dressing) with some green figs and a sliced nectarine. I have also included a small packet of trail mix and a pink lady to still any hunger pangs which might arise during the day until lunch. I have offered the girl's a suprise today if they eat all their lunch, must pop into the shops and find some stickers. Will keep you posted on the lunch incentive. Have a great day!

Lunch Box Idea: Basil pesto tortilla stuffed with garden veg

Decided to try a wrap as todays lunch box idea. (Still trying to find a delicious wholewheat version though.) I filled it with basil pesto, shredded lettuce, bean sprouts, grated carrot and some chopped red pepper. Melissa devoured her wrap and Kelsey's came home without a bite. I also skewered some watermelon balls and large black grapes for a bit of variety and included some trail mix and a peeled minneola.

Lunch Box Idea: Valentines Day

Lunch Box Idea under pressure.Today I woke up and it suddenly dawned on me that Valentine's Day had once again lurked up on me and I hadn't purchased or put any thought into making it a really special day for Gav and the girls. My creative juices flowed as much as possible at 5am in the morning. I whipped out my heart shaped cookie cutter and found anything in my low stocked fridge that was still edible and set to work. Cucumber and pineapple shaped hearts. Heart shaped peanut butter sammies. Red pepper hearts with some pea pods and carrot balls to fill the gaps. I also found some red paper and quickly cut out a heart shaped message for the girls to find on opening their boxes. Voila!

Lunch Box Ideas: Organic butternut puree

Finding lunch box ideas .....My girls have rediscovered a love for pureed food after spending a few weeks with their 12 month old cousin in the December holidays. I have discovered the wonderful new range of Organic pureed baby foods at Woollies and decided to surprise them with an inclusion in their school lunchbox. Something different and nutritious. Melissa was delighted to find provita's in her lunchbox today as she has always enjoyed these. Though not wheat and gluten free I'm sure all of you can relate to simply unspirational days where time simply runs away from you and you need to grab for a box. These will be few and far between in 2007.... The "glippertjies" are Kelsey's favourite and she can polish off quite a few bunches at once. These "glippertjies" are fresh from her grandpa's garden.  Do you have any friends or family that would like to receive our regular updates? PLease do email them as the more moms online the more inspiration and creative ideas for us all. Remember to keep emailing your lunchbox hits through to me for possible inclusion on the website.
