Lunchbox idea: Breakfast in a Cup




Found these plastic cups at our local supply shop, they are perfect for breakfast in a cup, big enough to pack a substantial portion to fill a hungry tummy but compact enough to fit easily into lunch coolers. Never thought a plastic cup could inspire so many different lunchbox ideas. They come with lids, which seal the cups to prevent any leakages. Available in packs of ten to fit most household budgets. Create layers in bold, vibrant colours which will add interest to any lunchbox. Experiment with a variety of tastes and flavours. I love being able to see the contents which are usually hidden inside regular plastic containers. Let your imagination run wild...... In a cup....in a cup... in a cup?

Layered Breakfast in a Cup 

Ingredients:
  • Sugar free muesli
  • Plain organic yoghurt
  • Fruit salad 
Instructions:
  1. Make your favourite fruit salad, this one is made from chopped papino's, mangoes, granadilla's and banana.
  2. Place a layer of sugar free muesli in the base of the plastic cup, I used a boxed brand but you could make your own.
  3. Add a layer of plain organic yoghurt.
  4. Seal the cup.
Experiment with different colours and fruits for interesting effects.

The Healthy Lunchbox: Double Decker Peanut Butter Daisies


Today the healthy lunchbox is packed with double decker daisies. Apple slices layered together with peanut butter,secured with a toothpick and topped with a dried cranberry. Some juicy red plums and fig halves finish off the box (a rare find).

Lunchboxes: Pear Mice and Tricoloured Pasta


Feeling creative todays lunchboxes turned into a work of art. I dipped two pear halves in some coconut and transformed them into two mice. Some strawberries, carrot balls and a bowl of tri-coloured pasta made with chopped peppers and peas finished the lunchboxes.

Lunchbox Recipe: Lightly Salted Popcorn and Apple Rings

Today Melissa and Kelsey have a large bag of lightly salted popcorn finished off with a bright blue ribbon, some orange slices, a bunch of seedless black grapes and some apple rings dipped in orange juice to prevent browning. I found these cute soccer ball serviettes and just had to include them as they are playing hockey today and the message "keep your eye on the ball" seemed most appropriate.

Lunchbox Recipe: Lightly salted Popcorn

Ingredients:

1/4 cup unpopped (or 8 cups popped) popcorn
Mary-ann's Organic Seasoning Salt
Cold Pressed Extra Virgin Olive Oil

Method:
Pop the popcorn (A hot air popcorn popper is ideal). Drizzle lightly with the olive oil and season with the organic seasoning salt to taste. Toss until well blended.

Lunchbox Idea: Cashew and Cinnamon Dipped Pears with a Lettuce and Cucumber Roll

Today Melissa and Kelsey have pear wedges dipped in cashew nuts and cinnamon, a great lunchbox idea. They also have a wheat free rye roll stuffed full of lettuce and cucumber as well as some pineapple rings with star cut centres.

Lunchbox Idea: Banana Bread with Cucumber Rings and a Seedless Grape Bracelet

Today's Lunchbox Idea: Melissa and Kelsey have some wheat free, sugar free, egg free and dairy free banana bread in their lunchbox. I also packed in a seedless grape bracelet, some cucumber rings (which Kelsey had her fingers through earlier this morning much to her delight), some pineapple flowers and some delicious fresh strawberries. They also have orange infused water to drink and some funky lady serviettes to brighten their lunch.

Lunchbox Ideas: Arty Orange Hedgehog and Rolled Oat Muffin Cakes


More lunchbox ideas.... A melon ball garnish inspired this most recent lunchbox creation the Arty Orange hedgehog. Half an orange skewered with strawberries,kiwi's, oranges and seedless black grapes. Melissa and Kelsey were most impressed by this recent creation. I also discovered a recipe for rolled oat muffins which look just like the real thing. The centre is a soft mixture of oats porridge,dates and mashed banana. They taste delicious despite their slightly different muffin texture. I eagerly await the girls' verdict of their muffin cakes this afternoon. They'll either love them or hate them...

Sugar Free Party (Well almost.)

Kelsey turned 8 on the 4th March 2007. We had 22 9 year old's to entertain for an afternoon of dancing, sing-star and swimming, as you all well know this is a challenge on its own, I decided not to pump them full of sugar which always makes them over excited but offer healthy treats with kid appeal and in close liason with Kelsey we came up with the treats pictured. Brightly coloured bowls, serviettes and a funky tablecloth made the eats seem more spectacular. I did consent to a bowl of mini meringues and an ice-cream cake though. There are sugar free ice-cream cakes available but unfotunately pressed for time we opted for the regular variety close to home. The jugs were filled with diluted berry blaze and one with ice cold water. The feedback was great and all the girls thoroughly enjoyed their afternoon and no-one actually missed the regular poisoned party treats. Everyone wanted to know where we got the funky disco ball from though.

Lunch Box Ideas: Wholewheat Raisin Bread and Rasberry Salad


Today we indulged in a large bowl of raspberry salad with 2 slices of wholewheat raisin bread, great lunch box ideas. I made the bread in my bread machine and decided to try adding some raisins to it and create a wholewheat raisin bread. The bread was somewhat sweet and most delicious.

Lunch Box Idea: Basil pesto tortilla stuffed with garden veg

Decided to try a wrap as todays lunch box idea. (Still trying to find a delicious wholewheat version though.) I filled it with basil pesto, shredded lettuce, bean sprouts, grated carrot and some chopped red pepper. Melissa devoured her wrap and Kelsey's came home without a bite. I also skewered some watermelon balls and large black grapes for a bit of variety and included some trail mix and a peeled minneola.

On a stick: Fruit Kebabs

Today I chopped up kiwi fruit and orange segments and threaded them on a stick. The girls thoroughly enjoyed these, always amazes me how children think that the taste of food changes when you change the shape. I also found some boxed rice crackers at the spar free of sugar and other additives.These are exclusive to spar but not readily available and I have been unable to find them again. I have asked my local Spar to source them for me and will let you know as soon as they are in stock. The girls love these and they are wonderful to include in their lunchboxes be careful of the regular rice crackers which all supermarkets stock though as they are loaded with additives
