Perfect for school lunches Pea, Feta & Mint Frittata
Having no lunchbox basics in my pantry cupboard this morning I stumbled across this quick and easy recipe perfect for school lunches. The Pea, Feta & Mint Fritatta, the consistency resembles that of a quiche and is quite tasty and delicious getting a thumbs up by both girls and dad. I also added a handful of sumptious cherries, sliced peach and some heart shaped pineapple slices which I made using the heart shaped cutter from the Sweetheart Cutter collection. Its possible to quickly and easily create fun shapes with fruit and veggies for school lunches which liven up a boring lunch.

The Healthy Lunchbox: Double Decker Peanut Butter Daisies
Today the healthy lunchbox is packed with double decker daisies. Apple slices layered together with peanut butter,secured with a toothpick and topped with a dried cranberry. Some juicy red plums and fig halves finish off the box (a rare find).

Lunchboxes: Pear Mice and Tricoloured Pasta
Feeling creative todays lunchboxes turned into a work of art. I dipped two pear halves in some coconut and transformed them into two mice. Some strawberries, carrot balls and a bowl of tri-coloured pasta made with chopped peppers and peas finished the lunchboxes.

Lunchbox Recipe: Lightly salted Popcorn
Ingredients:
1/4 cup unpopped (or 8 cups popped) popcorn
Mary-ann's Organic Seasoning Salt
Cold Pressed Extra Virgin Olive Oil
Method:
Pop the popcorn (A hot air popcorn popper is ideal). Drizzle lightly with the olive oil and season with the organic seasoning salt to taste. Toss until well blended.

Lunchbox Ideas: Arty Orange Hedgehog and Rolled Oat Muffin Cakes
More lunchbox ideas.... A melon ball garnish inspired this most recent lunchbox creation the Arty Orange hedgehog. Half an orange skewered with strawberries,kiwi's, oranges and seedless black grapes. Melissa and Kelsey were most impressed by this recent creation. I also discovered a recipe for rolled oat muffins which look just like the real thing. The centre is a soft mixture of oats porridge,dates and mashed banana. They taste delicious despite their slightly different muffin texture. I eagerly await the girls' verdict of their muffin cakes this afternoon. They'll either love them or hate them...

On a stick: Fruit Kebabs
Today I chopped up kiwi fruit and orange segments and threaded them on a stick. The girls thoroughly enjoyed these, always amazes me how children think that the taste of food changes when you change the shape. I also found some boxed rice crackers at the spar free of sugar and other additives.These are exclusive to spar but not readily available and I have been unable to find them again. I have asked my local Spar to source them for me and will let you know as soon as they are in stock.
