Raw Picnic Punch with Baby Potato Salad

A box filled with raw baby carrots, freshly podded green peas, sliced yellow pepper, naartjie, minneola and a few strawberries pack a punch today. I also included some baby potato salad and sliced red salad onions in a separate container to help calm the carbo cravings, see the small insert in the bottom right of the image. I recently had my body composition tested and to my surprise my body fat percentage was above norm despite my ideal body weight and water percentage way below norm. I have never really been a drinker and often a whole day will pass without me consuming any liquid at all this resulted in me being virtually dehydrated. We are now making a concious effort to up the water intake back to 6-8 glasses per day and so the girls once again have a bottle of spring water packed in to still the thirst.

School Lunchbox: Yellow Pepper Salad

Rosa tomatoes tossed with cucumber and yellow pepper chunks, a side olive oil and balsamic viniagrette dressing, ryvita's and a raspberry pot fill up the girls school lunchbox today. I know Melissa will not appreciate its contents as she far prefers a fruit selection in her lunchbox, but even health fundi's run short of supplies on the odd occasion.

Lunchboxes: Tropical Pasta Salad with Cucumber Twists

Today Melissa and Kelsey have a tropical pineapple salad in their lunchboxes with sliced apricots and pineapple chunks. They also have a strawberry and kiwi fruit kebab and a Cucumber Twist. Slightly uninspired yesterday, I simply filled the lunchboxes with whole fruits and mini rice cakes. Melissa's comments yesterday afternoon: "Mom, why have you stopped packing shapes in my lunchbox, it looks like you just stuck the food in to fill the box today."- need I say more.

Lunch Box Ideas: Wholewheat Raisin Bread and Rasberry Salad


Today we indulged in a large bowl of raspberry salad with 2 slices of wholewheat raisin bread, great lunch box ideas. I made the bread in my bread machine and decided to try adding some raisins to it and create a wholewheat raisin bread. The bread was somewhat sweet and most delicious.

Lunch Box Ideas: Pasta Prima Vera and green figs

Lunch Box Ideas: A bowl full of pasta Prima Vera (made with grated carrots, broccoli florets, red pepper and chopped tomato with delicious dressing) with some green figs and a sliced nectarine. I have also included a small packet of trail mix and a pink lady to still any hunger pangs which might arise during the day until lunch. I have offered the girl's a suprise today if they eat all their lunch, must pop into the shops and find some stickers. Will keep you posted on the lunch incentive. Have a great day!

Lunch Box Idea: Strawberries and Homemade Trail Mix




Same old lunch box idea. As you can see I have once again included strawberries in Melissa and Kelsey's lunchbox today. Strawberries are definately in at the moment and will be eaten three times a day if permitted. We've had them in fruit salad, juiced, ice lollies, ice cream but their absolute favorite is to eat them as is or as an occasional treat drizzled with cream. For a bit of variety I have mixed them with peeled oranges. We also mixed our own trail mix this morning. This ensures that it is preservative free. I also like to include the girls, and have them add the bits that they really enjoy, as this ensures that the lunchbox comes home empty. They are running in a cross country race this afternoon in their brand new DSG running vests , and I also included a bottle of filtered water which I am sure will be devoured after the race if not before. The extra large kiwis which are imported from New Zealand, I managed to acquire reasonably inexpensively, they have also been enjoyed this week. I have also prepared fruit salad below which will be light on their stomach but will give them enough energy to complete their 2km run. I hope that they have eaten all their raisins as these are also an excellent natural energy source. I'm off to Laerskool Jopie Fourie for the cross country.Enjoy your weekend!
